&#8220;With Science&#8221; Day"},"content":{"rendered":"<p>Several people have been interested in cooking \u201cwith science\u201d for quite awhile, so a day was finally decided and materials were purchased to make it happen.\u00a0 One of our members owns the \u201c<a href=\"http:\/\/modernistcuisine.com\/\">Modernist Cuisine<\/a>\u201d cookbook, which provides an amazingly detailed set of recipes for those willing to hunt down the materials and equipment to follow them.<\/p>\n<p><a href=\"https:\/\/www.sector67.org\/blog\/wp-content\/uploads\/2012\/12\/IMG_4779.jpg\" rel=\"lightbox[1960]\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-1973\" alt=\"IMG_4779\" Cuisine inspired Weber charcoal grilling with special modifications<\/li>\n<li>Sous vide custards and ice cream base<\/li>\n<\/ul>\n<p>The event was a success when measured by the number of times we heard people say \u201cOh my God!\u201d following the first bites of various food courses. One person testified to saying it 6 different times.<\/p>\n<p><a href=\"https:\/\/www.sector67.org\/blog\/wp-content\/uploads\/2012\/12\/IMG_4850.jpg\" rel=\"lightbox[1960]\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter\" alt=\"IMG_4850\" src=\"https:\/\/www.sector67.org\/blog\/wp-content\/uploads\/2012\/12\/IMG_4850-225x300.jpg\" width=\"225\" height=\"300\" \/><\/a><\/p>\n<p>For my part, I was happy that the amount of effort that went into making 40 hamburgers was worth it. We learned that the hamburgers need only be cryofryed for about 15 seconds and then deep fried for a minute and a half at 350 F. We used organic cold pressed high oleic sunflower oil for deep frying and it worked wonderfully.
